Delicious!


Today I stayed home from work. My brain is in denial that anything significant has happened to me. My body tells a very different story. One could push me over with a feather. I was awake last night at 1:30 and couldn't go back to sleep. So I opted to stay home from work just to rest.

Something that has always been therapeutic for me is baking. I made the most wonderful persimmon chocolate chip cookies. You might want to try them:

In a blender, mix together 1 cup persimmon pulp with 1 tsp. baking soda. This breaks up the pulp and integrates the soda. It will turn into a congealed mass in a few minutes.

In a bowl, mix together 1 stick of butter (1/2 cup) or margarine; 1 cup brown sugar; 1 egg. Cream together until smooth. Add persimmon mixture and blend well. Add 2 cups all-purpose flour, 1/2 tsp. cinnamon; 1/4 tsp. ground nutmeg. Mix well. Add 1/2 cup chopped pecans or walnuts and 1 1/2 cups chocolate chips.

Drop from teaspoon onto greased cookie sheets and bake at 350 degrees for 10-12 minutes.
